Lately, I’ve been obsessed with sweet-meets-salty combinations. Enter Seattle Chocolate Co.’s new JTruffles. The artisan collection features beautiful pyramid-shaped, fresh cream ganache truffles in the nine varieties: Magma 65 Dark, Crème 40 Milk, Pure Vida Coffee, Savory Hazelnut, Cherry Praline, Crème Brulee, Limoncello, Peppermint Stick … and Salt Water Caramel. With its “firm, chewy caramel” center and “dash of salt in milk chocolate,” the Salt Water Caramel was sweet, savory and quite filling. Perhaps it was the all-natural European chocolate. Maybe it was the fresh Northwest cream (made with 40% butterfat). Regardless, I now know “what happiness tastes like.”
Ingredients: Caramel (sugar, heavy whipping cream, corn syrup, butter, pure vanilla), 33% cacao milk chocolate (sugar, cocoa butter, whole milk powder, chocolate liquor, soya lecithin, pure vanilla), fresh cream, 48% cacao dark chocolate (sugar, chocolate liquor, cocoa butter, soya lecithin, pure vanilla), corn syrup, cultured dextrose.
