With organic sales up in Britain, customer demands are also growing. In response to these demands, ADM Cocoa in the U.K. has developed a new range of certified organic chocolate ingredients, in milk, dark and white chocolate. In order to meet customer needs, changes had to be made.

“When switching to organic processing, we have to flush the system with approximately four metric tons of organic beans to eradicate any trace of non-organic material,” said Simon Haywood, sales director, chocolate at ADM Cocoa. “We also had to introduce a complete mass balance system for full traceability of organic products.” The changes and certification makes ADM Cocoa “one of the few organic chocolate producers in the U.K.,” said a spokesman.
