Symrise develops masking solutions for stevia

According to Symrise’s sensory studies with specially trained test panelists, stevia produces off-notes of lingering bitterness and astringency and its sweetness profile often differs from expectation. As a solution, Symrise has developed new flavor solutions to mask the unpleasant off-notes of stevia and enhance its sweetening properties. As part of the company’s SymLife MASK portfolio, the new masking flavorings are based on natural patented ingredients and flavor modifiers and can be applied to confectionery products using stevia.

Stevia rebaudiana is an herbal sweetener with zero calories, approved for use in food and beverage applications in multiple countries, including the United States.
